At our school, they have a thing called "jeans because".
On Fridays, the teachers get to wear jeans, if they pay a dollar to the office. Then they get a little "jeans because" sticker to wear, to show they paid for it.
Now, since I get to wear PE clothes (shorts and sweats) I haven't participated all year. My rationale is, I don't wear the same clothes as them(other teachers) on other days, so I won't wear them on Friday.
So, I don't donate any money to their little fund.
Do you think anyone is/would be upset at this?

No. You're the gym teacher. You're doing your job. If you wore jeans, that would interfere.
Tell them you dropped a five in there in late October. They'll never know the difference.

My wife teaches at a middle school and they all donate $25 to Unicef so that they can wear jeans on Fridays.

One month went to tsunami relief, another for a local charity, etc...
It's nice, but should I just pony up the buck, and wear my PE clothes anyway?

You just answered it. They sound like good causes to me. Go along with the gag - If there were donuts and bagels to go along with this would you participate ?

BTW. It's Friday. We wear jeans here at my school. There are no such funds to allow us to do that! Thank god! I'd probably never pay!!! 
Don't call me callous. I give money to charitable causes. I just don't think I need to pay to wear jeans for goodness sake.

PE Clothes is your uniform.
So if you changed your normal work outfit and wore jeans, I would pay a buck.
But if you are wearing shorts, T-shirts/sweats on Friday as your normal PE clothes, I would not pay a buck.
