at wtr100 acres we're going to plow under the hay and do row crops for a few years

The choices are soybeans or corn. My thought is corn for the first year as the corn will shade out a lot of the weeds from the alfalfa flavored weeds we call hay. Followed by a few years of soy beans. Soybeans are potentially higher profit crop and will keep the N2 level in the field up although its pretty good as it is from the alfalfa.
