how can you climb in one of those critters?

If I were in the market for a touring cycle, I'd seriously look at a recumbent. Seriously, that has to be more comfortable after 8 hrs. of sitting than an upright.

I would think crosswinds would be less of a problem because you're closer to the ground.

leverage and being able to get out of the saddle should make a huge difference

Recumbents have more leverage than an upright. On an upright, you are limited to how much you weigh in standing on the pedals. The backrest of a recumbent provides leverage that is many times more than an upright. Think about leg-press machines... you're able to press way more than you weigh, no?
