I am obsessed with pancakes at the moment. Chocolate chip with fresh fruit has been the order of the day here for the last twenty four hours, but now I'm thinking of broadening my pancake horizons. A couple of ideas so far:

walnut and raisin pancakes with maple syrup
almond and honey (you could use honey instead of sugar in the batter)

Of course you have to smother them in fresh banana and berries. Anyone got a brilliant idea what to put in a pancake?

Take out some of the liquid from the recipe...mash the bananas up...dont cut them small...mash them...and add it to the batter. Banana and chocolate chips is a good combo.

Pecan and cinnamon.

Apple and cinnamon. Soften the apples first by cooking them a little, then add them to the batter.

I remember trying apples years ago, but they were too juicy and the pancakes never cooked. By cooking the apples first, does that help evaporate some of the juice?

Use apple pie or cherry pie fillings. Put the batter on the griddle, then add the apple or cherry slices. Pour some batter on top to seal off the fruit when you flip them over.

You could also make regular pancakes, spread cherry filling on top and finish with a halo of whipped cream around the rim...

Pour the batter (make it a little more liquid than normal) to cover the bottom of a large frying pan and after it starts to harden up a little, 'scramble' it up. Then add raisins and apple pieces. Let that fry up til the dough is all cooked. Keep 'tossing' as it cooks. Then sprinkle cinnamon & sugar over it.

Consider stuffed french toast. I hear there's a load of variations.

But as for pancakes, my favorite are plain--then dazzle them with toppings.

Also, there are Dutch Baby pancakes made in the oven with many variations.

Just want to add one proviso:

Cook slowly at less than 300 degrees !! or else the middle will not be done

Custom pancakes in the shape of letters are pretty cool. I think Williams Sonoma has letter-shaped cookie cutters.

And as far as what to include, you can't go wrong with either chocolate chips or blueberries. Both are fabulously delicious and highly decadent. Smile

When Goette Une makes them, she uses bananas. For apple pancakes, she uses applesauce. I think I could be forgiven for bragging about my 9-year-old's cooking ability, but these pancakes rock the casbah.
