Posted: 06/22/04 - 16:26 Post subject: gimme yer recipes
Okay, so, I'm about to be an aunt for the 4th time my newest niecelet will be born any minute now. I thought I would bring my sister some meals that freeze well for her to feed her in-laws who will no doubt move in and camp out in her house and demand to be fed for the next X number of months. I'm not joking. They mean well and will probably help but have gotten spoiled by the fact that my sister is a near gourmet and loves to cook for all of us. I think her attitude on that will change when she's up nights again. I'm already anticipating their burden, which will only be compounded by the 3 1/2 year old 'big sister' sure to have issues with this new crying messy thing in the house. So. Give me your recipes for things that freeze well. They don't need to be gourmet, I'm thinking more about feeding the in-laws, husband and 3 year old than my sister's standards. Or any other ideas.
Thanks!

Can you make tuna noodle casserole? So easy. If you have never done it, here's how. Cook some fat noodles. Mix 1 can tuna and 1 can cr. mushroom soup together in a pot. Drain noodles. Mix noodles and soup in casserole dish. Before you put it in the oven, put some bread crumbs on top and grate some orange cheese to put on top, until most of the top of the noodles is covered. Pop it in the oven at 350 for about 25 mins. Freezes well. Reheats well. Goes with a side salad well. Put some foil on top and sweet viola there's dinny.

Frozen pizza? I know it is a staple around my house .
My grandmother would make perogies whenever she visited. We would freeze them for meals. Mmm. Perogies with melted butter covering them and sausage.

Yes, don't start my sister on how 'helpful' they all are. (seriously, I don't think a lot of them even work.... ) I'm just trying to pre-empt some of the stress on her part.
Here is 'big sister' while I'm bragging. Or as I call her, Mini Me, she's an exact replica of my sister, except one eighth her size.....

Ziti bake
Like lasagna only simpler. Cook the noodles, mix with your favorite sauce, then sprinkle Parm and Shredded Mozz on the top and bake it until the top looks like pizza.
Easy Wheesy Lemon Squeezy.
Fettucini Alfredo Bake:
Get and a knorr's suace packet for Fettucini Alfredo. Cook the noodles, some broccoli, and some chicken. Throw it all together in a bowl and mix it up. Top with cheese and bake until it looks like G'mas macncheese.

Easy Enchilada filling (that can be frozen and taken out when it needs to be assembled). If you freeze the tortillas, they will be a little dry when baked, but you can freeze them all together.
Bake a pork roast or pot roast. Shred the meat in a food processor (or cut into bite sized hunks). Add one can chopped green chiles, one small onion diced. Manually stir in 1/2 can of enchilada sauce. Place filling into tortillas and place in greased (with shortening or with non-stick spray), 9 x 13 pan. Cover fully with remaining can of enchilada sauce, and possibly another (Depending on your preference). Cover with cheddar and monteray jack cheese. Bake 25 minutes until heated through and cheese is bubbly.

FOX SOUP.
Take an old fox, remove the wiskers and place to the side.
Place the fox in a large pot with some potato's, carrots and barley.
Cover the ingredients with water. Bring to the boil then slowly simmer for about 3 hours. Strain the ingredients.
Fox Soup is ready to serve. Garnish with the wiskers.
Fox Soup is said to make you very clever.
