I need to make a meal for the one neighbor that I really don't know. And where was the rule that you had to provide meals for a neighbor when I was waiting to pop?? I guess I feel a little put out because
(1)I have to prepare for her parents as well......WTF....if your mom is there....why can't she cook??? (2) she's put in a special request for an anesthesiologist and it wasn't my husband, (3) the woman that requested I do this...has snubbed me at social functions and finally (4) they finally took down the dam& x-mas decorations 2 freaking days ago, but had time to add an addition to their living room.
so I'm going to do this and LIKE IT because I will not be the unfriendly, snobby neighbor.
What should I make???

When I don't know the family very well, I buy a frozen entree' so if they are nitpicky about where their food comes from, they'll see it's straight from Stouffer's. (Plus, all the ingredients are there, so any food allergens can be easily seen) I also buy a fresh loaf of bread from the bakery and maybe a fresh pie as well. I also buy a bag of salad with all the fixings already in the bag. And POOF! You have dinner!

For someone that doesn't really know their neighbor, you sure do know a lot about them.

So why do you have to make them dinner anyway?
. I'm with aire, just dress it up a bit. My favorite thing to do with salad (now, anyway) is take the pre-bagged stuff and throw in some fresh herbs (like a bit of chopped parsley and cives, maybe some basil) from the garden, along with some shredded parmesan, croutons, and soy nuts and some tomatoes and cucumbers. It looks like you put a lot of effort in but it's not real time consuming.

I've always made a tray of lasagna.
Since her mother will be there, I'd insist that it is kept frozen until her mother leaves. That way she has a meal that she does not have to prepare when help is gone. Could you call and say that you're going to drop off the meal once her company leaves? Sounds bold, but it should be for her (not her mother).
Home made soup works great too. That can be prepared and frozen as well. My father always makes that for my grandmother (a large batch of it) and freezes it for her to make when she needs a home made meal. Gallon freezer baggies are great for storage as well. Place them in a square container while freezing and the baggies will freeze up nicely.
I'd be frustrated with having to cook for her extended family as well. That's what they should do while they are there!!!
