In my neighborhood if someone doesn't want to or isn't able to part of the cooking brigade that time, they just say as much. Doesn't mean they don't want to/won't be asked again.

But if you're feeling like you'd like to give this person a hand, ask when the mom is leaving, and which kind of takeout they prefer. Then when mom leaves order the Thai food or whatever for then. You don't have to cook anything. You don't even really (if you're feeling evil) have to ask what everyone likes. A plain pizza would be manna if they've just had a kid.
