Cades Cove is a cool place. So, did you hike from there? Like, for instance, the trail to Abrams Falls?
If you only hiked 3-4 hours, you didn't make it up to Mt. LeConte. Too bad. Great views from up there.
Did you hike the streets of Gatlinburg?

Hey! I live near there! You could visit ME!
Are you looking for day hikes, or overnight? There are several good ones that you can do in about three days that will take you over the summits of 3 or so high peaks in the Adirondack area. Many start out from the Adirondack Loj, which is about 10 minutes away from the Lake Placid village.
Anyway, let me know how strenuous you want your vacation to be - all levels of difficulty can be accomodated.

we did the abrams falls thing, couldn't do a much longer trail -- had a 12 yr old (who totally outhiked me) my son was setting a killer pace too.
gatlinburg scared me. i hate crowds. so no, no hiking thru that stuff.
our cabin had a great view of LeConte but we never made it "up" there.
smokies are beautiful, even from a distance.

we're looking for day hikes only, 2 kids involved but they can hold their own. i'm mostly worried about me. so, maximum 3 hour in and out. it really depends on the up and down of it, but i'd definitely say we are an "easy" trail family.

Cascade Mountain is a perfect one, then. Giant Mountain isn't hard, but it's probably a good 6 hours in and out. Actually, if that's the kind of hiking you're looking for, you might consider the Lake George area - LOTS of 3-4 hour hikes, fantastic views, and the lake itself is beautiful. Buck Mountain, Blue Mountain, Black Mountain, the Tongue Mountain range (this took me about 10 hours, but it was a great hike) - all of those are in Lake George. You could still hit Lake Placid - it's only about a 1:20 drive from my place, and I'm 5 miles south of Lake George. I'll try and dig up some links.
