Easy: Nat King Cole's "Chestnuts Roasting on an Open Fire"
I am teaching myself the piano part right now. Working myself up to singing and playing it for Tracy's relatives at this year's get together.

There are too many to make me choose 1!!!!!
and for me, it may not be a recording since I like to perform
I really try to not choose one favorite, there are so many good things about so many songs. but here are some that I can't live without:
Twas in the Moon of Wintertime (a Huron Carol)
Still, Still, Still (Norman Luboff arrangement, just like on the Mannheim Steamroller CD)
Sheep May Safely Graze by J. S. Bach (I love playing this for a choir to sing)
The Alfred Burt Carols: Caroling, Caroling; Star Carol; We'll Dress the House
I Wonder as I Wander (Appalachian Carol)
How Far Is It to Bethlehem?
Do You Hear What I Hear?
Winter Wonderland (I teach this one in sign language to my students at school)
Sleigh Ride
Some Celtic tunes: Christmas Eve; Holly and the Ivy; Christmas Day; My Dancing Day; Wexford Carol

#1 All-Time Favorite Holiday Song is "The 12 Days of Christmas" by the Mackenzie Brothers. It's a beauty.
#2 The Hannukah Song by Adam Sandler
#3 (Serious) Let it Snow (It's the starting and ending music in Die Hard)

I love Christmas music and as always can't decide on just one of anything, so, here's the long list of the ones I've either just heard or I can think of quickly that I LOVE:
O Holy night
What Child is this
I'll be home for Christmas (makes me cry, esp thinking of soldiers away right now)
White Christmas (By the drifters is my favorite)
Andy Williams' Its the most wonderful time of the year
The Muppet's 12 days of Christmas
Kenny and Dolly's Christmas without you
Harry Connick Jr's Sleighride (and well his whole album, see "crimmus albums" post)
and of course Peanuts/Vince Guaraldi's "Christmas Time is here"

Big Fat 1!
It's not so much a Holiday song, but I also really, really, really like Louis Armstrong's What A Wonderful World.
And Carol of the Bells and Still, Still, Still.
Lots of great songs and music this time of year.
