You're missing some vital information in this poll.
Are the carrots full size? If so, are we talking about the bagged carrots with the tops cut off or a rubberbanded carrots with the tops still on them? For recipes that call for carrots, I usually buy bagged and peel my own.
Are we talking about baby carrots? If so, they come already peeled and I normally eat them raw. I will sometimes cook them.

If they are full sized we will peel them, the baby carrots that go in my lunch as a snack are pre-peeled.

We don't peel the big carrots because good nutrients are in the skin.
But we have been known to buy pre-peeled baby carrots.
