Today is St. Vincent of Saragossa's Day, the patron saint of wine-producers and vinegar-makers.
Why not celebrate it with a bottle of your favourite vinegar?

I don't generally care much for vinegar, except as it relates to the pickling process.

Well, I have a case of Italian grape juice in the basement...doubt that it's vinegar yet so....perhaps it's time to move a bottle up here so that it can get to room temperature before supper.

I'm with PH on the balsamic. I use it on my greens, and also when I steam red cabbage or broccoli... I mix the balsamic vinegar with some olive oil (I use the blender to mix the two) and pour onto the veggies or greens. It's a great dressing, and a bottle doesn't usually last long around here. In fact, I think I'm out.

Well, I really like it...and the really good stuff? I can sip it straight from the bottle.
I've gotten to know a pipemaker in Bologna. Bought lots of pipes from him. Being a balsamic fan and knowing the Modena is right down the road from Bologna, I mentioned in an e-mail to him that I wondered if he could recommend a good balsamic vinegar....he sent me two bottles - for free! (So I sent him some good ol' Kentucky bourbon...we're good friends now.)

Only white vinegar though. Run a potful of vinegar water through the brew cycle and then like two more pots of clear to rinse....it does cut a lot of the buildup.
I LOVE balsamic too! It's great on just about any grilled veggie. I marinate yellow squash, zucchini, onions and portabellas in it then grill away...YUM!
