They are good on the grill or smoked. Kind of oily for the frying pan. But they fight like a pissed off wolverine and are a blast to catch. Have fun!

never been blue fishing, but told they fight like heck.

We have something down here called bluerunners that also are oily, bloody fish, but put up a fight. I wonder if they are related. They are good smoked or for bait. Too bloody to grill.
I prefer the snappers down here for eating, myself.
