I want to start getting all the things I need to cook delicious meals for those I may entertain...particularly one lady friend I'm trying to impress.

Of course, I won't start doing that until I get moved into my new apartment and have a table again.

So...over the next 20 or so days, what should be on my list of spices and food stuffs to get to stock my pantry with, and utensils/pots/pans/etc to fill my drawers and cupboards with?

Watch Hell's Kitchen. You may not know the equipment you need, but you'll go in the kitchen with the right frame of mind. Twisted Evil

Good chef's knife, cutting board, bowls, pots and pans, wire whisk. That's 95% of what I use in the kitchen.

How much money are you willing to spend?

the essentials:

1. a set of good sharp knives and poly cutting boards. Get a sharpener too.

2. Don't bother with non-stick pans. Get stainless or hard anodized. Easier to clean and no teflon coming off in your food. Stainless if you're on a budget, HA if you can spring for it. One saute pan, one omelet pan, one dutch oven, one saucepan, and one wok (this can be non stick, actually)

as for spices/seasonings, the essentials IMHO:

basil
oregano
rosemary
thyme
cinnamon
cloves (ground)
ground mustard
turmeric
cumin
paprika
cayenne
allspice

buy others as needed for recipes.

Oh, and don't cook with a wine you wouldn't drink.

Better off going with something you know than trying to impress her...

C+ is the best grade you can get from a woman...You can shoot for the A but you're not going to get it. So you're setting yourself up for failure. Spending hours in a kitchen making the perfect meal when you know the best you can do is C+....don't waste your time.

Again KISS..You and your lady friend(what a term BTW!) will all be better off

Sounds like someone who has tried and failed.

Simple is good, and it's always wise to do a test run, but make sure it's something good. Don't sell yourself short and end up doing shake and bake.
