Leftovers from last night. I tried, and was successful, in recreating dinner from Tumbleweed this weekend. Mesquite chicken breast covered in melted cheese and sauteed summer squash. It was so yummy!

I was thinking along the same lines. I'm thinking though the "family" size so I'll have some for meals ready for next week too.

There's a lot you can do in the crock pot with that chicken!
You can make an awesome chicken chili--which tastes great!

They are still in my freezer and I need to eat in about 2.5 - 3 hours. I may bake them for 30 minutes and they try the soup/rice thing in the same pan.
