Marinate in salsa and hot sauce and broil. Top with shredded Mexican four cheese blend, broil until melted and dip in more salsa and guacamole, with a green salad on the side. Extra points for topping the chicken with chopped tomatoes and scallions for color.

Place the chicken breasts (frozen are OK) in aluminium foil, add some rosemary, olive oil and garlic. Wrap tightly place in oven for about 45 - 50 minutes. Don't worry, they will cook very nicely, for the last 10 - 15 mins open the package and let the breasts brown a little
