OK, gang.....for those of us who love to cook, fall typically means we get to light the oven again, big bubbly pots of chili, stews, soups, etc on the stove, and wonderful smells all through the house. One more reason that it's my favorite time of year!!!
What's your very favorite fall recipe that as soon as the weather turns cold, you can't wait to make? I'm digging up the recipe for beer-cheddar soup and will post when I find it.
OK, here goes....and this is an authentic Wisconsin recipe from one of my favorite Wisconsin sites:
4 Tablespoons butter
1/3 cup chopped green onion, green tops and white base.
1/4 cup finely chopped carrot
1/4 cup flour
2 1/2 cups chicken broth
1/2 cup good Wisconsin beer
1 tablespoon Dijon mustard
2 cups half and half
2 cups shredded aged Wisconsin Cheddar cheese (use aged cheese for better flavor)
(if you wish, one pound cooked sausage in bite-sized chunks)
Melt butter in large, heavy pan
Add onion & carrot
Cook and stir over medium-high heat until vegetables become translucent
Stir in flour, cook 1 minute, stirring constantly
Add broth, beer and mustard. Stir well until mixture reaches a boil.
Reduce heat to low, cover and simmer 30 minutes.
Add hot half and half and cheese, and if you wish, cooked smoked sausage.
Stir and warm gently until heated through and cheese is melted.
8 servings.

I hope people share their recipes. My wife has tried several times to make it and she is never happy with the results. Maybe she can do better with someone elses!

Plain and simple - Roast pork - center cut, bone in - or a center cut loin - insert fresh garlic every half inch and then smother the top with italian seasoning

I'm in the mood for soups and stew. My comfort food is meat and potatoes though... roast beef with mashed potatoes, gravy, peas and corn.
I'm looking for an easy tortilla soup recipe... without the exotic chilies that I can't find. Anyone?

Chillied Chicken Fricassee made with chicken breast, tomatoes, beans, peas and corn. YUMMY. Of course, my wife gets tired of eating this 5 days a week, but I don't.

Tortilla Soup
1/2 lb cubed pork
2 potatoes, chopped
1 or 2 cans whole green chiles, chopped (or sub with Rotel)
1 can diced tomatoes
Other veggies you can add: green beans, carrots, corn, green and/ or yellow summer squash, onions, etc
1 Chop pork in small pieces and brown with onion in 1 1/2 tablespoons of fat. (Use the same pot you're going to make the soup in) Add three cups of beef broth. (Or, 3 cups water and 3 beef bouillon cubes)
2 Add all veggies. Simmer for about 30 minutes, or till veggies are tender. Season to taste with cumin, garlic salt, chili powder, pepper salt.
3. Top each serving with shredded mozzarella cheese and tortilla chips
Notes: I add all the "other veggies" because they all add such good flavor. You can also add a few corn cobs. I also add cilantro. When you buy the green chiles, buy the whole ones because the chopped aren't as good in this recipe. I only use one chile, too. You can also use ground beef (use beef broth) or chicken (add chicken broth instead of beef, though). If your meat is precooked, you can make this in a crock pot--just let it cook all day!

Sometimes I make this on Saturday mornings...the cinnamon and maple...smells heavenly.
Cinnamon-raisin french toast.
7 large eggs
2 1/2cups half and half
1/2 cup sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 1 1/2-inch-thick slices cinnamon-raisin bread or French bread (never have used French bread).
4 tablespoons (about) unsalted butter (salted works, i've never used unsalted).
Maple syrup (optional)
Whisk first 6 ingredients in 13x9x2-inch glass baking dish. Add bread to egg mixture and let soak 20 minutes, pressing down occasionally.
Preheat oven to 350°F. Melt 2 tablespoons butter in heavy large skillet over medium heat. Working in batches, add bread to skillet. Cook until golden brown, turning once and adding more butter as needed, about 3 minutes. Transfer to baking sheet. Bake until bread puffs up and is firm in middle, about 30 minutes. Serve warm with maple syrup, if desired.

Blueberry Scone
2c flour
1/4c sugar
1tbs baking powder
1tbs orange zest
1/4tsp salt
1/4tsp baking soda
1/4c margarine
1/2c buttermilk (I use low fat buttermilk)
1/4c egg beaters
1tsp vanilla
1c blueberries
Orange powdered sugar icing:
3/4c powdered sugar
1/4tsp orange zest
3-4tsp orange juice
Preheat oven 400degrees
Stir flour-baking soda. Cut in margarine until it resembles coarse crumbs. Make a well in center of dry ingredients. Stir together buttermilk, egg, vanilla. Add to flour mixture and stir with fork until moist. Gently stir in blueberries.
Turn dough out onto a lightly floured surface. Quickly knead dough by folding and pressing dough gently for 12-15 strokes or until dough is almost smooth. Pat dough into a 7”circle on a greased baking sheet. Cut dough into 10 wedges.
Bake at 400 for 15-20 min or until golden. Let cool on wire rack.
Combine powdered sugar, zest and orange juice until it’s of drizzling consistency. May have to add more sugar or OJ depending on consistency. Drizzle on scones when they are cooled.
