Two Wooden Spoon Apple Cakes are approaching completion.


WOODEN SPOON APPLE CAKE

Peel, core & slice 3 cups Mc Intosh apples & set aside. (I usually use 4 cups of apples)

Mix together:
¾ cup Crisco Oil (For a fat free version use 3/4 cup of applesauce)
1 cup sugar
3 eggs

Sift in:
2 ¼ cups flour
1.5 tbsp. Cinnamon (I've used Apple Pie Spice)
1 tsp. baking soda
1 pinch salt

Blend together—use wooden spoon only. (I've always used a cake mixer with no problems)

Add: 2 tsp. Pure vanilla
1 cup chocolate morsels

Fold in the 3 cups of apples until batter is very thick. Use tube pan. Bake at 350 degrees, for less than 60 minutes.

Do you have to use chocolate? Does it improve the flavor that much?

I've been looking for an apple cake with just apples.

Use whatever you want to or not. Philistine !!! The original I have also calls for a 1/2 cup of nuts.

Here's another recipe:

APPLE BROWNIES

1 Cup margarine or butter (Note: you may substitute 1 cup plain applesauce for a fat free version)
1 ½ Cups of sugar
2 Eggs
3 Large Apples peeled and cored (I use about 4 cups of apples)
2 Cups of flour
1 Tsp baking powder
½ Tsp Baking soda
½ Tsp Salt
2 tsp Cinnamon (Apple pie spice works well also)
1 Cup chopped walnuts (Optional)

Preheat oven to 350

I've used whatever apples are in the fridge. I usually buy the "utility" apples from the local orchard for my cooking. I tell them to "mix them up".
