Genie, I just saw this on your thanksgiving menu, but I thought it merited a thread all its own. I had this for dessert the other night, and it was freaking fabulous. I almost ordered another slice to take back to the hotel for a midnight snack, but I thought that would be too piglike.

If I may say so,....mixing some bourbon with some whipped cream makes for a perfect sauce for pumpkin cheesecake.
I stole the idea from the food channel, and it helped me win an award for my pumpkin cheesecake.

There wasn't any bourbon on mine. But there was a very light drizzling of caramel and some whipped cream. Oh god, it was good.
I'll definitely be making that soon.

It IS fabulous, and a nice combo between the traditional, but somewhat dull, pumpkin pie and most everyone's fave, cheesecake. I just saw the spiked cream recipe, I think I may try that this year too. Bourbon is a great thing to cook with, I did a pork tenderloin in a honey-bourbon glaze that was awesome a few weeks ago.

I have not made this for several years.
My notes say " use shortbread" crust recipe. I would have to look that up if anyone is interested.
This used a big 10 inch springform pan. I also have noted that it is almost too full for the food processor...
2 1/2 pound cream cheese ( 5 8 oz cream cheese)
1 cup granulated sugar
4 large eggs, lightly beaten
3 egg yolks, lightly beaten
3 tablespoons flour
2 tsp ground cinnamon
1 tsp ground clover
1 tsp ground ginger
1 cup heavy cream
1 tablespoon vanilla extract
1 can ( 1 pound) mashed pumpkin
Preheat oven to 425 F.
Beat together cream cheese, sugar, eggs, and yolks.
Add the flour, cinnamon, cloves, and sugar.
Beat in the cream and vanilla, then add the mashed pumpkin and mix.
Pour the mixture into the prepared crust and bake for fifteen minutes. Reduce oven temp to 275 and bake for one hour. Turn off the heat, but leave cake in oven overnight to cool.

I don't like pumpkin pie myself, or pumpkin cheesecake ( although I think it's better than plain pumpkin pie) give me cherry pie or apple pie any day.
If all that is offered on Thanksgiving day is pumpkin, I'll have an extra serving of stuffing and cranberry sauce that I love!!
