...I found this recipe in a "LOW CARB" cookbook a friend left at the gym.
Ingredients:
Chicken Skin
Salt
1. Preheat oven to 375
2. Take any and all chicken skin you have on hand (WTF??)-chuncks of fat will work too-and spread them out as flat as you can on the broiler rack.
3. Bake for 10-15 min. or until skin gets brown and crunchy (thicker pieces take longer than thinner ones). Sprinkle with salt and eat like chips-these are not to be believed!!!
Yield: This will totally depend on how much chicken skin you bake, but here's the info that really matters: There's no carbohydrates here at all!!!!
Yes folks, finally a use for all that chicken skin ya have laying around.

how much really? wouldn't a lot of it "broil" out? I mean if they're that crispy.......can't be much left.

American Heart Assoc. website
AHA Recommendation
The American Heart Association recommends removing the skin from chicken, turkey and other poultry before cooking, except when roasting. When roasting, the skin should be removed before the meat is eaten. Removing the skin lowers the fat (especially saturated fat and cholesterol).
Data from the U.S. Department of Agriculture (USDA) show that chicken with skin is higher in fat than chicken without skin.
...I don't know how much cholesterol is left, but since the AHA sez roasted skin still has sat.fat and cholesterol, that's good enough for me... I still say

great, snack for after the Santaria rituals. sacrifice the chicken then fry of the skin. after that throw dem bones around and read each others futures too. now what can we do with all the wasteful meat part though.

I have no idea, really. just wondering out loud, how much could be left if you're broiling the h out of it.
