Could it be that Lot's wife was a runner, perhaps even a marathon runner long before that Greek bloke even thought of it.
And so she is fleeing Sodom, just hitting her stride with a cooling breeze evaporating the sweat from her body.

But she stops and looks back and the minute she stops running she starts projectile sweating, the salts pour out of her body hardining her feet, then her legs, then her torso until she is immobilisied in her own hardened sweat.

Plausible?

or maybe the storyteller wanted to emphasize the consequences of disobeying God and thought the story could use a little more punch. Becoming a pillar of salt is much more dramatic than saying that her heart gave out from over-exertion.
