well, I cook every night now, but that's beside the point.
Now, I'll have to come here tomorrow and share what delightful treat I whipped up for me and the kids.
(motivation based posting)

ZITI!!!! (or penne if you prefer)... lately my favorite easy to prepare meal
1. boil a pound of ziti
2. spray no-stick spray on a cassarole dish, dump drained pasta in dish
3. add sauce (I use bottled most often)
4. Optional: add about 4 oz. ricotta cheee, swirling it in the noodles (not stirring thoroughly)
5. top with a sprinkling of mozzarella or 4-cheese mixture
6. Bake about 20 minutes at 375F to heat through and melt the cheese.
I love eating this meal. Kids like garlic bread with it. I like the odd crunchy noodle that was poking up and dried out in the oven.

Tonight we had, baked walleye...and french fries...with Brocholli
Fish and chips and brocholli for the coach kids tonight.
(I love stuff you can put in the oven)
(and we had frozen pizza last night, Cappy)

Walleye, fries and chips! Damn, wish I'd of been in your neighborhood, I would have invited myself over. I cooked sausage, a baked potato and corn.

My staple meal is boneless, skinless chicken breast w/ steamed mixed veggies. I'll mix up the seasoning on the chicken and vary the veggies from day-to-day, but thats what I usually cook.

Today was attack the fridge night.
Wife is at a Nurse's Day Dinner so I had a grilled cheese, some hot dogs, curly fries and three popcorn chicken pieces.
Last night was steak and mashed potatoes.
Sunday evening was barbecue at a Pampered Chef Party. (I got the miniloaf ceramic pan...) BTW the hostess cooked a pizza right on the grill !!!
Saturday I think we had chicken breasts...

So last night was Sahara's recipe. I used Penne, and it turned out pretty good. I grilled some pork loins. And had some veggies.
A good meal.
Tonight, we are going to eat a bunch of left overs.

I cooked a bunch of boneless chicken breasts on Sunday as I often do and use it to make several things through the week. After cooking and cutting them up in bite size pieces freeze what you aren't gonna use in 1 or 2 days. This week we had or are having.....
1. Cream chicken on bisquits
Take 2 cans of cream of chicken soup, add some of the cut up chicken heat it up and serve it on those refrigerator tube bisquits. My kids love this. You could even put some broccoli in it if ya want.
2. Chicken and wild rice.
Cook some good wild rice and add a can of cream of chicken soup. Toss in some of the chicken and some veggies. Yummy!
3. Chicken salad
Just a nice mix of greens, tomatoes, red bell pepper, some cheese, and of course the chicken.
4. Chicken stir fry.
The chicken, whatever veggies you like, stir fry seasoning. serve over rice.
All are very simple.

To make that even better...
In a separate bowl mix up about 8 oz of ricotta and two eggs. Add Mozzarella and Parmesan. Stir mixture into the ziti/penne mix...(Continue with your recipe)
BTW My wife "volunteered" me to bake my Choc chip cookie dough cheesecake with Oreo Cookie crust for a teacher's thing tomorrow...

My staple too. You can alternate the chicken for rice every few nights (I love my microwave rice cooker), or if I'm really crazy, all three together.
