I have company coming tomorrow for an early dinner and they are vegetarians. No eggs, but yes on the cheese. They are Indian, so I don't want to make something bland, which is all have for veggie dishes. I just don't know what the heck to make for them. And they love spicy, but my husband has really bad heartburn, so it cannot be too spicy.
I thought of making vegetarian chili, but none of the recipes I have found look great. Any ideas?

Could you PM me the recipe? I used to have a wonderful vg lasagna recipe, but darned if I can find it. I was also thinking of something that I can just throw into my slow cooker before they arive and have it ready when they get here. And then just make something simple to go on the side.
I've made vg dishes to accompany meat dishes, but never a whole veggie meal for 6. This is more difficult than I had thought.
