I'm bored with my own cooking and frozen dinners.....but I gotta go to the store.....what I need to make are some of those good tasty casseroles that you find at church potluck dinners.....hearty, tasty, filling and cheap.....noodles and mystery meat.....hmmm......ideas?

Yep. One of my hubby's faves. You can make it on the stove in 20 or in the crockpot in 3 hours and tastes even better the next day.
1-2 cups cooked, chopped chicken. (The canned kind is perfect)
2 cups chicken broth
1 can corn, UNdrained
1 can navy beans, pinto beans, or black beans, drained
1 can Rotel
1 can regular chopped tomatoes
Garlic, onion, salt, pepper, cumin to taste
Cilantro, if you like it.
Mix all ingredients and simmer on low heat for about 20 minutes. If you don't like it hot, use mild green chiles and regular canned tomatoes instead of Rotel. If you like it hotter add chili powder and jalapenos.
After it's done, place tortilla chips in your bowl. Top chili with shredded cheese and a dollop of sour cream.
Easy!!!

Another:
Get two cans of your favorite chili. Add 3 ounces of cream cheese. Heat through to melt cheese.
Bake a potato. Top with chili/cheese mixture. Top with shredded cheese and sour cream. Add chopped olives and you're done.

Malfalda pasta is like little baby lasagnas. You can make a mock lasagna casserole by mixing that with the same ricotta mix you would to make lasagna or stuffed shells with, plus tomato sauce. Kind of like you would make baked ziti. Top with shreddy mozzarella cheese and bake. YUM
And there's always the tried and true chicken and rice with cream of mushroom soup topped with breadcrumbs. I have a good recipe somewhere that uses the boxed Uncle Ben's Wild Rice. When I make it, I use the Zatarain's garlic and herb rice mix.
Our church makes a really scary one for the homeless shelter, it's got cream of mushroom soup, corned beef hash and egg noodles. ICK...

Find a local church and ask about their church cookbook. Any self-respecting church will have had a cookbook printed in the last 5 years. Said cookbook will be chock-full of potluck goodness.

Guess the churches I went to as a youngun' weren't very good...

I guess cajuns don't use recipes?.....they just make a roux and throw a bunch of wild swamp critters in it with some tomato and okra and rice.....

Ok, tanks for the ideas.....here's the deal....
Split chicken breasts were on sale so I got a package of them....they are simmering on the stove right now.....some will be used for a King Ranch casserole that genie kind of got me thinking about with her cream of mushroom and rice idea and some for that tortilla soups that was suggested by airehead...
Hamburger was on sale so I got a couple of big packages of that to make some chili, as suggested by highheat.....
They also had some chuck roast on sale, so I put that in the freezer for next week...
and MED....I was in Louisiana this weekend, but I forgot to bring back some gator tail and mudbugs, so that'l just have to wait....
