A great place to find obscure flours and grains that are hard to come by, as well as the usual stuff. Decent prices, great service and quick shipping. Their grain cereals are tasty also!

I haven't used their mail order but a few stores carry bob's products around here...and they are high quality...
also look for Hodgson Mill which is also very, very good...

We have Hodgson Mill, just the basics, in most of our grocery, Fresh Fields and the health food stores too! I've used almost everything our stores carry of theirs and it is really good.

White flour is the DEVIL - the only thing I use it for is play-doh. Seriously, you could eat cardboard and have it be more nutritionally complete. I use whole wheat flour in everything (even cookies) mixed with a twelve grain bread flour I get at the bulk food store.
I also replace all fats in baking with apple sauce, and cut the sugar by 1/3. I haven't had any complaints yet.

I use the applesauce and egg white thing in baking too! Works great, especially with banana bread and stuff like that. Haven't been able to modify a cookie recipe to my satisfaction though....do you have a good chocolate chip cookie recipe that works?

I just use my plain old choc chip recipe from the back of the bag. The cookies rise up a little more and are always chewy, so if you're a crispy cookie fan it just doesn't work. I like them like that, though.
Cream together:
1 cup applesauce
3/4 cup brown sugar (packed)
1/2 cup white sugar
Beat in 2 eggs
2 tsp vanilla
Combine 2 cups flour (I use ww)
1tsp baking soda
1tsp salt
Blend in with creamed mixture
Add as many choc chips as you like and drop from small spoon onto GREASED baking sheet. Bake in 375 oven for 10 to 12 minutes. They will be higher and rounder than a butter based cookie.
