I like melted brie, or gouda.... not to mention old cheddar, don't forget havarti on a sandwich... and goat cheese is good on pizza. Do cottage cheese and cream cheese count? 'Cause I like them too. Provolone, bleu, monterey jack are all good too. Mozerella is nice for topping lasagna.
Come to think of it, I haven't met a cheese I don't like.

Currently apple smoked gruyere. I made some twice-baked potatoes using leftover mashed potatoes and added some shredded aforementioned cheese. Yuuuuuu-uuuuummm! I made these amazing brie-stuffed biscuits a month or so for an elegant dinner with friends. A fight nearly broke out for that last one. Goat cheese is great to cook with because it melts nicely in risotto dishes, yet stays intact as a topping on toasts and pizzas.
But every trip to the supermarket I buy a block of extra-sharp cheddar. And I like it just fine.
