Bel Paese. REAL, hard core, Italian aged Provolone. The kind of provolone that literally brings tears to your eyes. Swiss, Gouda, love Stilton and other kinds of blue cheeses. Like that Irish cheese (Blarney ?)

Purdue Alumni send out a ball of very mild swiss cheese every year and it is my absolute favorite. Eric can probably verify.
I like cheese. Gouda is too smoky. I eat cheddar and colby jack.
