I thought you yankee types always called it 'dressing'...ours is 'stuffing' but its in its own dish. What goes in the bird (some onions, carrots, celery), stays in the bird.

We did a big baking thing a few year back with a friend. Made a bunch of batches of seven or eight types of cookies and then divvied them up between us. It was fun, tasty, and a great way to spend the day.

I made some pumpkin soup on sunday and some tuna chowder on monday. I have a recipe for baked acorn squash that I'd like to try. I won't be doing any of the thanksgiving cooking, but I'm hoping to have some kind of dinner party soon. Just wish I had a nice place to host it.

I have my dear grandmother's tins that I use for family.
The best part is having the kids wander in and out helping as much as they like, or not. They want to take over here and there too which is all good. I pick a variety of music and dance around the kitchen - prompting the kids roll their eyes at me.

Here we go:
In November I will begin making lots and lots of 1/3 size Wooden Spoon Apple Cakes. (Last year about 50). Then I will be making 3 or 4 regular size Apple Cakes.
Next: I will be making one choc chip Cookie Dough Cheesecake for Turkey day dinner in NJ. (I'll probably make a flourless choc cake for the SIL) I will be making another Choch Chip wonder for Christmas.
To cap it off I'll be making a couple of homemade breads for the Turkey day dinner: a Pumpernickel and an Onion Bread.
Christmas Dinner will involve Stuffed Shells Florentine and Homemade bread from me. Wife and kids will make the other stuff. I will also be making one pan of Lasagna with dessert for the guards at the NG headquarters.

Pumpkin and Black Bean Soup Recipe courtesy Rachael Ray
Recipe Summary
Difficulty: Easy
Prep Time: 5 minutes
Cook Time: 15 minutes
Yield: 4 to 6 servings

2 tablespoon extra-virgin olive oil, 1 turn of the pan
1 medium onion, finely chopped
3 cups canned or packaged vegetable stock, found on soup aisle
1 can (14 1/2 ounces) diced tomatoes in juice
1 can (15 ounces) black beans, drained
2 cans (15 ounces) pumpkin puree (found often on the baking aisle)
1 cup heavy cream
1 tablespoon curry powder, 1 palm full
1 1/2 teaspoons ground cumin, 1/2 palm full
1/2 teaspoon cayenne pepper, eyeball it in the palm of your hand
Coarse salt
20 blades fresh chives, chopped or snipped, for garnish
Heat a soup pot over medium heat. Add oil. When oil is hot, add onion.
Saute onions 5 minutes. Add broth, tomatoes, black beans and pumpkin
puree. Stir to combine ingredients and bring soup to a boil. Reduce
heat to medium low and stir in cream, curry, cumin, cayenne and salt,
to taste. Simmer 5 minutes, adjust seasonings and serve garnished with
chopped chives.

By popular request:
Wooden Spoon Apple Cake
Pre heat oven to 350
Peel core and slice up 3 cups of Apples (I use 4 cups coarsely chopped) Set aside.
Mix together
3/4 cup Crisco Oil (for a lower fat version use 3/4 cup of applesauce)
1 cup of sugar
3 eggs
2 tsps of vanilla (Real if possible)
Sift in:
2.25 cups of flour
1 heaping tbsp of cinnamon
1tsp baking soda
1pinch of salt
Blend in using a wooden spoon (I use a mixer up to this point)
From here on I start using a large spatula from Pampered Chef
Add 1 cup of choc chip morsels (Or more)
Fold in the apples, mix well
Batter will be very thick.
Pour batter in a tube pan (Use some Pam or other spray) and bake for about 60 minutes.
+++++++++++++Bonus Recipe:
Cranberry Relish
A neat change from the normal Cranberry Sauce
1 package of fresh cranberries (rinse them in a colander and take out the mushy ones)
1 small onion
1/2 cup of sugar
3/4 cup of sour cream
3 tablespoons of relish (minimum)
Grind Cranberries and onion in food processor. Add remaining ingredients, mix well. Put mixture in a bowl, cover and freeze. Thaw before serving.

Not a bundt pan - a tube pan with the removable tube.
I use rammekins for the 1/3 size ones.

Gotcha. I don't own one but they're like a tart pan kind of thing that comes apart with the tube in the center, right?
What size ramekin? A bigger one I'd assume.
