I'm making my own right now out of sourdough. My mom gave me some of her sourdough starter for Christmas. Her English muffins are awesome, I've grown up on them and could live on them alone. I have high expectations for my own English muffins. I have a batch going right now....we'll see how it goes.

Anyone else do sourdough? My mom was told her starter was 37 years old when she got it in 1967...

i have no idea what a sourdough starter is but it sounds like it should be moldy or something.

i have eaten bakery sourdough bread. Embarassed

I wonder how much it has changed over the past 76 years. It would be interesting to compare some of the first batches ever made by that start to the current ones.

Well I wonder that too...mom swears she killed it several times and it has come out fine. You're supposed to "freshen it" every so many weeks and she's missed sometimes or other times whatever whatever...but she's always kept it going and it tastes awesome.

RR its not moldy, I don't totally get it but its like a yeast or whatever, so it sort of ferments I guess (probably the wrong word) which is what gives it the distinctive sourdough flavor. Mom's isn't the really strong San Francisco type but definitely is sourdough. My first 4 muffins look good....maybe I should try it....

Starters are fairly easy to make if I remember correctly. you just make some dough and let it sit out and attrack yeast. I will have to do some digging on this to be sure.

This is the basic starter recipe I've seen most frequently...although I have never tried it myself. I think you can order it from either Bob's Red Mill or the Baker's Catalogue pre-made.

INGREDIENTS:

1 pkg. active dry yeast
1/2 cup warm water
2 cups warm water
2 cups all purpose flour
1 tbs. granulated sugar or honey

PREPARATION:

Sprinkle the yeast over the first amount of warm water and sugar, stir and let set 10 mins. Add second amount of warm water and flour, beat until smooth, cover with a cheesecloth and let set in a warm place for several days ,stirring several times per day.

When ready the starter should have a sour smell with small bubbles gently rising to the surface. The whole precess will take from 5 to 10 days depending to some extent on the time of year. Place in a jar and refrigerate.

TO REPLENISH
For each cup of starter used, add 3/4 cup of warm water , 3/4 cup of flour , 1 tsp. of sugar or honey and stir well. Cover loosely and allow to set at room temp. for AT LEAST one day. Refrigerate.

FEEDING: If starter is not used regularly stir in a tsp. of honey or sugar about every 10 days.

Also, sourdoughs from different parts of the country have different flavors due to the conditions.

Essentially, what is happening is you are attracting airborne wild yeasts. Different places "taste" different supposedly.


There are many ways to make starter--one uses grapes another uses potatoes.

It is fun--you can even mail order yeast starter packages if you are interested.
