Yummy yum yum......just got back from the pool/weight room and polished off a BIG bowl of turkey soup that I made before I left. I always save the carcass and use it to make either turkey/brown rice soup or noodle or barley. This year was barley (extra carbs/grains, in keeping with the Maintain Campaign's emphasis on healthy eating). Lotsa yummy veggies, carrots, corn, potatoes, celery, onion, tons of spices (tarragon, salt, pepper, garlic powder, rosemary, thyme, sage, parsley)....add a leftover crusty vienna roll and presto! A great post workout dinner. <URP> This would also be yum with PH's multi grain rolls, which I made last weekend and they are SUPER TASTY!
What are some ways you use up those leftovers, other than just reheating as is?? Hopefully some of them are even healthy?

Here is my favorite recipe; not healthy, but good
layer a casserole dish with wild rice (cooked)
top it with a layer of the left over turkey - cubed
top that with a mixture of cream of mushroom soup and milk (about 1/2 - 1 can of milk)
then mushrooms (cooked)
then black olives
then cheddar cheese
then sliced almonds.
Cook until it starts smelling good and the cheese is melted.
Mmmmmmmm. I'm not usually a casserole eater, but I do love this stuff. Mmmmmmmmm.

Our crew did an excellent job of finishing off just about everything that was made for the Thanksgiving feast. About the only thing that was left over in abudance [sp?] was cooked carrots.

A pretty pedestrian leftover cure that I enjoy is good old hash. Use a meat-grinder, chopper, or just cut up everything real fine. Be sure there's lots of left over potatoes. Drop it all in a frying pan with a few eggs in the middle. With a little catsup, it's a $9.99 skillet meal from Perkins. Yummm.

ACKKKK!!!!! You just caused some seriously scary flashbacks! I used to waitress at Perkins when I was in college!!!!
