Crust:

Use approximately 1.5 stacks of Oreo (or "Oreo type") Cookies, enough to make about 2 cups of crumbs.

Pulverize cookies in a food processor, add 4 TBS of Butter while the crumbs are spinning in the food processor. Take out the crumbs and spread evenly in the bottom of a 9 inch springform pan which you have coated with Pam or other cooking spray.

Preheat oven to 300 degrees

The cake itself:

3 ea 8oz packs of cream cheese
1 cup granulated sugar
5 large eggs
2 tps of Venilla

In a blender mix the cream cheese, vanilla and sugar until thoroughly creamed. Add the 5 eggs one at a time. Be sure to scrape sides and bottom of mixing bowl to insure uniformity.

The swirl:

2 oz of sweetened chocolate
approx 2 tbs of cheesecake mixture
2 oz of any fine liqueur

While the mixture is blending:

Melt 2 oz of sweetened chocolate in microweave safe bowl. When chocolate is melted add about 2 tbs of the cream cheese filling; mix thorougly. Add about 2 oz of any liqueur you want. Again, mix thoroughly. I have used Amaretto, Baileys, Grand Marnier. I recently made a white chocolate swirl using B and B. Keep on the side for a little later - you may have to re heat it for just a little bit.

Now for the final prep:

You can either make your own chocolate chip cookie dough or buy the ready made stuff - your choice.

Evenly place cookie dough pieces or teaspoons of cookie dough along the bottom of the cheesecake.

Once you have the crust ready, gently pour the cream cheese mix into the pan. Take the melted chocolate mix and pour on top of cake in a circular pattern. Next take a toothpick, starting at the center bring the toothpick to the edge then come from the edge to the middle and repeat until you have gone all the way around the cake.

Bake at 300 degrees for about 1.5 hours - check for doness after 1.25 hours. (Cooking time may go longer) I like my cheesecake to be a light brown color.

Cool on wire rack for 2 hours then place in fridge to cool thoroughly.

I take it this means I can't crash Thanksgiving? Sad

I think I'll try that this week. Thanks!

This looks delicious! I am such a cheesecake nut and don't eat pies!

I might try this for dessert for us on Turkey Day I have to say.

Thanks for posting this.
