Got a whole package of chicken breasts on its last legs so I have to cook them tonight. Inspire me someone....I was going to do chicken cutlets since I'm in a decidedly Italian mood tonight but I thought I'd see if there were any better ideas out there......

I'm a fan of those Campbell's Supper Bakes things - the lemon chicken one is really good. I recommend using an aluminum foil pan so that you don't have to do dishes.

Actually I did fajitas last night. That was tasty....I make everything in the wok, it's easier. I loooooove fajitas. Excellent way to use up leftover peppers. I ended up making chicken cutlets and man did they rock. Off to bed now.....early morning for moi!
