Anybody know them or take classes with them? I'm thinking of taking several of the hard-to-find-offered classes online with them this summer.

I'm not sure I'd want to get my entire degree from them, but I looked at their website and they certainly do offer a lot of courses. IMO, a few hard-to-find courses via them would be good, but I wouldn't take more than you had to.
Are they a brick & mortar institution? I don't suppose that matters if you are taking only a few courses... I wonder how this all washes out come grad time? First step you need to take is with your current college's admissions office, see if these credits are transferrable & will count towards your degree. They do have a limited accreditation... That would be my first concern.
I'm real wary of online programs. I did a fair amount of research before deciding to attend St. Mary's via distance. I know my degree will be worth what I've spent, but this is just not so with all online/distance programs. Buyer beware.

I don't know if a potential employer even (can) ask for your transcripts, but it would be good to know how these courses would look on paper.

Sort of. It's a brick and mortar college that offers accredited courses online. Due to the extremely limited and sucky Summer I and Summer II schedules at the two institutions at which I'm taking classes now, I needed another option. Canyon College came up in a search, and my advisor says their courses will count towards my program. What's interesting about them is that they have rolling admission, where you can start whenever you want (like U of Phoenix).
