I was just playing with the calculators on the site and (using some interpolation) it says I burned roughly 1200 calories on my run today. Add that to a typical 2500 calorie diet, and you're looking at 3700 calories for one day. Seems a bit out of reach. A typical lunch for me is a box of pasta roni prepared, and I figure that's about 1000 calories. To break even for the day, I'd have to eat almost 4 full meals? My stomach shrinks overnight, so I almost never eat a lot for breakfast. Am I missing calories somewhere, or should I really be eating that much? I never really lose weight when running a lot, so it seems that my diet is keeping up. Just looking for some thoughts.

I would suggest you keep a food diary for a week. Write down every single thing you put in your mouth, even a single piece of candy or an extra couple ounces of juice. I bet you'd be surprised how much you are consuming v. what you think you are. That said, 3,700 calories is nothing if you spread it out. I eat all day long to get the fuel I need. I also eat more than an entire South American village, but that's another story all together.
