and any old ones! Let's make use of our appliances. (Please also post
the garden burger recipes and variations!!!)



Here's the English Muffin Bread:

It's by Donna Rathmell German
(I'm giving the recipe for the largest loaf, if you need a smaller loaf recipe please pm me.)

1 1/4 cups water
2 tsp sugar
1 tsp salt
1/4 tsp baking soda
3 cups bread flour
3 tbs nonfat dry milk
2 tsp yeast

This is a start-to-finish in the machine bread. It will have a sunken top and
it is good and chewy, fantastic with cheeeeze. (A good cheddar or muenster is really good)

I made the bbq chicken tortillas for my family last night that Sahara had posted on Maintain forum, and thumbs up
Going to try the spinach pasta too. That sounds yummmmy.

Here's the recipe for veggie burgers, courtesy of Chef Al at Barley's in Columbus.....Kristin & I love these and go there whenever I go out to visit, so we begged for the recipe and he gave it to us!!! I made some modifications which are listed below. I had posted this at Kick a while back and I know everyone who tried it loved it--including squeak, in Australia and activemind, in Japan! This recipe gets around!!!

3 Large portabellas (quartered and chopped small)
2 cups cooked white rice
1 cup dry black beans, cooked until tender (I use canned)
1 carrot (peeled and diced)
1 green pepper, diced
1 tablespoon minced garlic
1/4 cup worcestershire sauce
1/2 cup olive oil
1/2 tablespoon Lawry's seasoning salt (taste before adding more)
1 teaspoon cayenne pepper
1 red onion finely, finely diced
2 cups bread crumbs (I use the seasoned ones for added flavor)

Combine all well in large mixing bowl
Form into patties
Saute' in pan with just a weeeeeeeeeee bit olive oil until brown on both
sides—or cook on George Forman grill, no oil needed!!!!

Genie's substitutions:
substitute 1 box drained chopped spinach for the pepper
substitute brown rice for the white, it’s healthier!
use the whole can of black beans for more bulk
omit olive oil and use one egg plus two egg whites to save fat

These do freeze but I cooked them first and then froze them. To reheat, just pop in the microwave for 1 minute (I think)

My stomach just growled reading that recipe. I was thinking that would be great for lunch but we don't have all of the ingredients in the house. I like the idea of chopped spinach in the burgers.

Here's a way to spice cooked spinach up (It's a recipe from Sevilla, Spain):

I love greens, much better than the standard iceburg lettuce. When I was studying abroad, I learned to love cooked spinach with garbanzos, olive oil and vinager dressing, and a runny egg mixed in with everything. The first time I had this, I almost threw up, but it was like a staple meal or something so I ended up eating it all the time. Now, I make it for my family.

I'm starting to feel like that chick on Survivor who always talked about food, so I'll try to control my recipe posting. Embarassed

Made this the other night and it was a huge hit!

Coconut Cream Pie:

1 1/4 c. packaged shredded coconut
3 c. fat free half-and-half cream
1/2 c. egg substitute
1/2 c. sugar
1/2 c. all-purpose flour
1/4 tsp. salt
1-1/2 tsp. vanilla
6 oz. reduced-fat graham cracker crust
Preheat oven to 350*. Spread coconut out on large baking sheet and bake until golden brown, stirring frequently, about 5-7 minutes.
In med. saucepan, whisk together half-and-half, egg substitute, sugar, flour and salt. Cook over med-high heat and bring to boil, stirring constantly with wire whisk. Remove from heat and stir in 1 cup of toasted coconut and vanilla. Pour into pie crust, cover with plastic wrap and chill until firm, about 2 hours. Top with remaining coconut and lite cool whip if desired. 8 servings

I know! That would be awesome. To my husband's horror, sometimes I actually watch Emeril! I'm always envious when the audience gets to sample the food.

I love it too!! I actually use it in place of cream in soups and sauces, sometimes you have to thicken a little with a cornstarch slurry but it is worth it to save all that fat. And it makes a great addition to hot chocolate!

Yes, I think that's about what I get out of a batch. Totally economical if you get the produce on sale! I love them!!!
