What DVD had the best 'extras'? I watched the Mummy extras, specifically "Making a Better Mummy" and it was awesome. Very Cool and it even had subtitles.

Almost Famous: Untitled is another good one. It includes both the theatrical version of the movie as well as "Untitled" which is an extended version which is even better (and it's a good movie to start with) plus a plethora of special features and a commentary track with Cameron Crowe's mom.
