If she can run 2.1 miles without stopping, the couch to 5K program is probably to remedial for her.
Try this program. It starts out assuming that you can run at least 1.5 miles w/o stopping. http://www.halhigdon.com/5K%20Training/5-Knovice.htm

Thanks for the links! I had the C25K bookmarked and I have Hal Higdon's site marked but hadn't perused it for the training. I will definitely be looking into them!
I don't want to burn out and I've been running 4 on 1 off for the last 2 weeks and from what I read I should be doing it every other day. My knees will thank me too, though I must say I'm surprised they haven't put up a rukus since I really started being serious about running.
Well off to the gym

Well it seems I can run 3miles, in 35min! I got on one of the newer treadmills, ran at about 5.2-5.6mph and felt great. I trust this treadmill's numbers more than the older one so I'm pretty happy with myself today

Welcome and and great job on trying to take back control of your health. It looks like you are making great progress already. I just started running again 2 years ago and boy do I feel great now.
